These Ritz Cookies are a delightful sweet and salty treat that are quick and easy to make. Creamy peanut butter sandwiched between two Ritz crackers, dipped in chocolate, and finished with a sprinkle of sea salt or colorful sprinkles.

Ritz Cookies:

  • 48 Ritz crackers
  • 3/4 cup creamy peanut butter
  • 2 3/4 cups chocolate chips
  • 1 tablespoon coconut oil (optional)
  • Flaky sea salt or sprinkles (optional)

Instructions

  1. Prepare Baking Sheet: Line a large baking sheet with parchment paper or wax paper.
  2. Assemble Cookie Sandwiches: Place 24 crackers on the baking sheet and spoon about 1/2 tablespoon of peanut butter onto each one. Press another cracker on top to form a sandwich cookie. Repeat with remaining crackers.
  3. Melt Chocolate: Combine chocolate chips and coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring until melted.
  4. Dip Cookies: Dip each sandwich cookie into the melted chocolate, coating evenly. Place on the baking sheet and sprinkle with sea salt or sprinkles.
  5. Set Chocolate: Allow the cookies to set until the chocolate hardens. Refrigerate to speed up the process if desired.
