4.8 from 94 reviews

A creamy, cheesy, and flavorful Rotel dip made with ground beef, taco seasoning, spicy Rotel tomatoes, and Velveeta cheese. Perfect for game day, parties, or casual gatherings served warm with chips or crackers.

Ingredients

Scale

Meat

  • 1 pound lean ground beef

Seasoning

  • 2 Tablespoons Homemade Taco Seasoning

Main Dip Ingredients

  • 10 ounce can Rotel tomatoes (diced tomatoes with green chilies)
  • 16 ounce Velveeta Cheese, cubed

Instructions

  1. Cook the ground beef: In a medium-sized skillet over medium-high heat, cook and crumble the ground beef until it is no longer pink. Make sure to break it apart evenly to ensure thorough cooking.
  2. Drain excess grease: Once cooked, carefully drain off any excess grease from the skillet to reduce fat and prevent the dip from being too oily.
  3. Add seasoning and tomatoes: Return the skillet to the heat and add the 2 tablespoons of homemade taco seasoning along with the entire 10-ounce can of Rotel tomatoes. Stir well to combine all the ingredients evenly.
  4. Melt the cheese: Add the 16 ounces of cubed Velveeta cheese to the skillet. Stir continuously over medium heat until the cheese is completely melted and everything is blended into a smooth, creamy dip.
  5. Serve warm: Pour the finished dip into a serving dish and serve immediately with tortilla chips, crackers, or fresh vegetables.

Notes

  • You can adjust the taco seasoning amount depending on your preferred spice level.
  • For a thicker dip, reduce the amount of Rotel tomatoes or drain some of the liquid before adding.
  • Use lean or extra-lean ground beef to keep the dip lighter.
  • This dip can be kept warm in a slow cooker on low setting during serving.
  • Velveeta cheese can be substituted with other processed cheese alternatives but will affect texture and flavor.
