Pasta:

  • 3/4 lb fettuccine or penne pasta

Shrimp:

  • 1 lb shrimp, peeled and deveined
  • 1 Tbsp oil
  • Salt and pepper, to taste
  • A pinch of paprika

Sauce:

  • 2 Tbsp unsalted butter
  • 1 small onion, finely chopped
  • 1 garlic clove, minced
  • 1/3 cup white wine (such as Chardonnay)
  • 2 cups heavy whipping cream
  • 1/3 cup grated Parmesan cheese

Garnish:

  • Fresh parsley or basil for garnish (optional)

Instructions

  1. Cook the Pasta: Boil pasta until al dente, then drain without rinsing.
  2. Cook the Shrimp: Season and sauté shrimp until pink and opaque. Set aside.
  3. Prepare the Sauce: Sauté onion, add garlic, then deglaze with white wine. Add cream and Parmesan, simmer until creamy.
  4. Combine: Mix shrimp, sauce, and pasta in skillet. Toss to coat evenly.
  5. Garnish and Serve: Garnish with herbs and extra Parmesan before serving.
