Instructions

  1. Poach the Eggs: Bring a pot of water to a boil, making sure there’s enough water to cover the eggs at the bottom. Place the metal outer rims of two mason jar lids flat on the bottom of the pot. Once the water boils, turn off the heat and carefully crack one egg into each rim. Cover the pot and poach the eggs for 5 minutes for semi-soft yolks, adjusting to 4 minutes for very soft or up to 5+ minutes for firmer yolks.
  2. Prepare the Toast and Avocado: While the eggs are poaching, toast the slices of whole grain bread to your preference. Smash the avocado evenly across each toast slice to create a creamy base.
  3. Assemble and Serve: After poaching, use a spatula to lift the eggs from the water. Gently remove the mason jar rims from around the eggs while over the pot to let excess water drip off. Place each poached egg on top of the avocado-smeared toast. Sprinkle with shaved Parmesan cheese, season with salt and pepper, and garnish with fresh herbs. Serve alongside quartered heirloom tomatoes for a fresh, colorful finish.
