  • 34 pounds beef chuck roast
  • 2 tablespoons vegetable oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • 2 bay leaves
  • Salt and freshly ground black pepper to taste

For the Gravy:

  • 3 tablespoons cornstarch
  • 3 tablespoons cold water

For Serving:

  • 8 slices of white bread or Texas toast
  • 4 cups prepared mashed potatoes
  • 2 tablespoons fresh parsley, chopped (optional garnish)

Instructions

  1. Prepare the Beef: Pat beef dry with paper towels and season with salt and pepper. Sear in a skillet until browned, then transfer to slow cooker.
  2. Sauté Onions and Garlic: Cook onions in the skillet, then add garlic and cook briefly.
  3. Deglaze and Combine: Deglaze the skillet with beef broth, then add Worcestershire sauce, tomato paste, thyme, and bay leaves. Transfer to slow cooker.
  4. Cook Slowly: Cover and cook on low for 8-10 hours or on high for 4-5 hours until beef is tender.
  5. Thicken Gravy: Remove beef, thicken cooking liquid with cornstarch mixture, and cook until thickened.
  6. Serve: Toast bread, then assemble each serving with bread, beef, gravy, and mashed potatoes. Garnish with parsley if desired.
