Ingredients

Scale

Meat and Vegetables

  • 1 lb. ground beef
  • 1 onion, chopped
  • 1 red bell pepper, diced
  • 3 cloves garlic, minced
  • 4 cups chopped cabbage
  • 1 cup shredded carrot

Tomato and Broth

  • 14.5 oz. can diced tomatoes
  • 8 oz. can tomato sauce
  • 4 cups beef broth

Seasonings

  • 1 tsp. paprika
  • 1 tsp. dried oregano
  • 1 tsp. salt (or to taste)
  • ¼ tsp. black pepper

Grains

  • ½ cup uncooked Minute brand rice

Garnish

  • Chopped fresh parsley (optional)

Instructions

  1. Brown the beef and sauté aromatics: In a skillet over medium-high heat, cook the ground beef until browned and no longer pink. Add the chopped onion and minced garlic, and sauté until the onion softens and becomes translucent.
  2. Combine ingredients in slow cooker: Transfer the cooked beef, onion, and garlic mixture to the slow cooker. Add the diced red bell pepper, chopped cabbage, shredded carrot, diced tomatoes, tomato sauce, beef broth, paprika, dried oregano, salt, and black pepper. Do not add rice yet.
  3. Mix ingredients: Stir all ingredients together to combine evenly in the slow cooker.
  4. Slow cook: Cover and cook on low heat for 6 hours, allowing flavors to meld and vegetables to soften.
  5. Add rice and finish cooking: After 6 hours, stir in the uncooked Minute rice. Continue cooking on low for an additional 45 minutes until the rice is tender and cooked through.
  6. Serve: Ladle the hot cabbage roll soup into bowls. Garnish with chopped fresh parsley if desired, and enjoy a warm, satisfying meal.

Notes

  • For a lower-fat version, substitute ground beef with ground turkey or lean ground beef.
  • If you prefer a softer cabbage texture, you can cook the soup for longer on low heat before adding the rice.
  • Minute rice is used for quick cooking; regular rice will require a longer cooking time added accordingly.
  • Adjust salt and spices to your taste preferences as broth and canned tomatoes can vary in saltiness.
  • This recipe can be doubled to serve a larger group, but make sure your slow cooker has sufficient capacity.
