Ingredients

Scale

Beef and Seasoning

  • 34 lbs. beef chuck roast
  • 1 oz. Lipton onion soup mix
  • 6 garlic cloves, peeled and left whole
  • 3 Tbsp. Worcestershire sauce
  • ½ tsp. black pepper
  • 15 oz. can beef broth

Horseradish Sauce

  • 1 cup sour cream
  • 1 Tbsp. milk (or buttermilk)
  • 2 Tbsp. cream horseradish
  • ½ tsp. salt
  • 1 tsp. Worcestershire sauce

Instructions

  1. Prepare the slow cooker: Place the beef chuck roast into the slow cooker, ensuring it’s centered for even cooking.
  2. Add seasoning: Sprinkle the Lipton onion soup mix evenly over the roast, then scatter the whole garlic cloves on top.
  3. Add liquids: Pour the beef broth and 3 tablespoons of Worcestershire sauce over the roast and season with black pepper.
  4. Cook: Cover and cook on low heat for 9 hours, allowing the meat to become tender and infused with flavors.
  5. Make horseradish sauce: While the meat is cooking, combine sour cream, milk (or buttermilk), cream horseradish, salt, and Worcestershire sauce in a small bowl. Mix well and refrigerate until ready to serve.
  6. Shred the meat: After cooking, use two forks to shred the beef in the slow cooker or on a plate, discarding any excess fat.
  7. Assemble sandwiches: Toast the sandwich buns if desired. Strain the shredded beef and pile it onto the buns, then spoon the horseradish sauce over the meat.
  8. Serve: Serve the sandwiches warm and enjoy your flavorful slow cooker meal.

Notes

  • For extra flavor, you can add a splash of red wine or a few dashes of hot sauce to the beef broth before cooking.
  • Leftover shredded beef can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
  • Feel free to add cheese slices to the sandwiches for a richer taste.
  • Use sturdy buns like Kaiser rolls or ciabatta to hold the juicy beef and sauce.
