Dry Ingredients:
- 3 cups (375g) all-purpose flour (spooned & leveled)
- 1 teaspoon baking soda
- 2 teaspoons ground ginger
- 1 and 1/4 teaspoons ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
Wet Ingredients:
- 3/4 cup (12 Tbsp; 170g) unsalted butter, softened to room temperature
- 3/4 cup (150g) packed dark brown sugar
- 1/3 cup (80ml) unsulphured or dark molasses (I prefer Grandma’s brand; do not use blackstrap)
- 1 egg, at room temperature
- 2 teaspoons pure vanilla extract
For Rolling:
- 1/3 cup (67g) granulated sugar
- Optional: 1 cup (180g) butterscotch chips or white chocolate chips or semi-sweet chocolate chips
- Mix Dry Ingredients: In a large bowl, combine flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt. Set aside.
- Cream Wet Ingredients: In a mixing bowl, cream butter, add brown sugar, molasses, egg, and vanilla. Beat until well combined.
- Combine and Chill: Slowly add dry ingredients to wet mixture. Chill dough for 2 hours or up to 3-4 days.
- Bake: Preheat oven to 350°F (177°C). Shape dough into balls, roll in sugar, place on baking sheet, bake for 10-12 minutes. Press chips into cookies if desired.
- Cool and Store: Cool on baking sheet, then transfer to a wire rack to cool completely. Store in an airtight container.
