Ingredients

Scale

Cheese Base

  • 10 oz brie (rind removed)
  • 2 oz cream cheese

Spiced Berry Jam

  • 13 oz berry jam (Bonne Maman – Four Fruits Preserves recommended)
  • 1 tbsp salsa macha (or chipotle adobo)
  • ½ lemon (zest only)
  • 2 tsp fresh rosemary
  • 1 tbsp honey

Garnishes & Serving

  • Pistachios (toasted and chopped, quantity to taste)
  • Chives (chopped, to taste)
  • Flaky salt (to taste)
  • Warm bread or toasted baguette slices (for serving)

Instructions

  1. Whip the Cheese: In a food processor, blend the brie (with rind removed) and cream cheese until smooth and creamy. Transfer the whipped cheese mixture to a piping bag and refrigerate for 15–20 minutes to firm slightly for easy piping.
  2. Make the Spicy Berry Jam: In a small saucepan, combine the berry jam, salsa macha, lemon zest, fresh rosemary, and honey. Bring to a gentle simmer over low heat, stirring occasionally, and cook for 5–6 minutes until the mixture thickens slightly. Remove from heat and return the jam mixture to its original jar. Cool the jar quickly by placing it in a bowl of ice water or refrigerate until fully chilled. Once cooled, transfer the jam into a piping bag.
  3. Pipe and Plate: On a serving plate, pipe the whipped brie mixture into smooth, even horizontal strips, holding the piping bag at a 45° angle to create clean lines. Leave spaces between each strip. Then, pipe the spiced berry jam into the spaces between the brie strips to create an appealing striped pattern.
  4. Finish and Serve: Sprinkle chopped toasted pistachios, chopped fresh chives, and flaky salt evenly over the top of the plated dip. Serve immediately with warm bread or toasted baguette slices for dipping and spreading. Enjoy this elegant and flavorful appetizer!

Notes

  • Removing the rind from the brie helps achieve a smoother whipped texture.
  • Salsa macha can be substituted with chipotle adobo for a smoky heat.
  • Chilling the cheese and jam mixtures makes piping easier and helps maintain clean lines on the plate.
  • Use toasted pistachios for added crunch and flavor contrast.
  • Warm bread or toasted baguette slices provide the perfect vehicle to enjoy the whipped brie dip.
