Chickpeas
- 15 oz can chickpeas (drained and rinsed)
Seasonings and Oil
- Spray oil (just a thin coating)
- 1/8 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/4–1/2 teaspoon cayenne pepper
- Preheat Oven: Heat the oven to 425°F to prepare for roasting the chickpeas.
- Prepare Chickpeas: Drain and rinse the canned chickpeas thoroughly. Spread them on a clean towel and rub with another to dry as much moisture as possible. Let them sit for about 10 minutes to dry further.
- Initial Roasting: Spread the dried chickpeas evenly on a large baking sheet. Place in the oven and roast for 30 minutes to start crisping them up.
- Shake and Continue Roasting: After 30 minutes, remove the baking sheet and give it a good shake to turn the chickpeas. Return them to the oven and roast for an additional 5 to 15 minutes, watching carefully to avoid burning.
- Coat with Oil and Season: Once chickpeas are crispy and slightly darkened, remove from oven and transfer to a large bowl. Lightly spritz with spray oil, then toss thoroughly with salt, garlic powder, onion powder, paprika, and cayenne pepper until evenly coated.
- Cool and Store: Spread the seasoned chickpeas back onto the baking sheet to cool completely. Store in an uncovered bowl or container at room temperature for up to one week for a crunchy snack.
Notes
- Drying the chickpeas well before roasting is crucial for maximum crispiness.
- Adjust cayenne pepper amount to control spiciness.
- Use an uncovered container to maintain crunch during storage.
- These roasted chickpeas make a great high-protein snack or salad topping.
