Ingredients

Scale

Cookie Dough:

  • ¾ cup unsalted butter (room temperature)
  • ½ cup granulated sugar
  • 2 tablespoons brown sugar
  • ¼ cup powdered sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 2 1/3 cups all purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon cream of tartar
  • 1 teaspoon baking powder
  • 3 tablespoons nonpareil sprinkles (green colors, such as teal green)
  • 1 cup white chocolate chips

Decoration:

  • Green candied cherries (such as Paradise Fruit Co.)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prepare for baking.
  2. Prepare Cherries: Cut some green candied cherries in half to use as the shamrock leaves and slice some strips of cherries to serve as the stems. Set these aside for decoration.
  3. Cream Butter and Sugars: In a large mixing bowl, use a mixer to cream together the room temperature unsalted butter, granulated sugar, brown sugar, and powdered sugar until the mixture is light and creamy in texture.
  4. Add Eggs and Vanilla: Incorporate the large egg, egg yolk, and vanilla extract into the creamed butter and sugar mixture, mixing until fully combined.
  5. Mix Dry Ingredients: Add the all purpose flour, salt, cream of tartar, and baking powder to the wet ingredients. Mix just until the flour mixture disappears, then fold in the green nonpareil sprinkles and white chocolate chips evenly.
  6. Scoop Dough: Use a large cookie scoop (approximately ¼ cup) to portion dough balls onto the lined baking sheet, spacing them about 2 inches apart. You may keep the scooped dough thick or flatten slightly to about 1 inch in thickness depending on your preference for thickness.
  7. Form Shamrocks: Arrange 3 or 4 half green cherries closely together in the center of each dough ball to form the leaves of the shamrock, then add a strip of candied cherry as the stem. Position the cherries closely so they hold shape during baking.
  8. Bake: Bake the cookies in the preheated oven for 10 minutes until set but still soft.
  9. Cool: Allow the cookies to cool on the baking sheet for 10 minutes before transferring them to a wire rack to cool completely.

Notes

  • Room temperature butter is essential for a smooth creaming process to achieve a light and fluffy cookie.
  • Placing the cherry pieces close together before baking helps maintain the shamrock shape.
  • Using a large cookie scoop ensures uniform cookie size and consistent baking.
  • You can substitute the green candied cherries with fresh green glacé cherries if available.
  • If you prefer thinner cookies, flatten the dough balls to about 1 inch before baking.
