Oatmeal Base:

  • 1 1/2 cups quick oats (or rolled oats)
  • 2/3 cup flour (spelt, white, or oat)
  • 1/2 cup sugar (or xylitol)
  • 1/2 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup oil (or butter)

Strawberry Filling:

  • 2 1/2 cups diced strawberries
  • 1 1/2 tsp cornstarch (or arrowroot)
  • 1 tbsp pure maple syrup (or sweetener of choice)

Instructions

  1. Preheat and Prepare: Preheat oven to 350°F. Grease an 8-inch baking pan or line with parchment paper.
  2. Mix Oatmeal Base: In a large bowl, combine oats, flour, cinnamon, baking powder, salt, and sugar. Add oil or melted butter and mix well.
  3. Layering: Firmly press 2/3 of the oat mixture into the bottom of the prepared pan.
  4. Prepare Strawberry Filling: In a separate bowl, mix diced strawberries, cornstarch, and maple syrup. Spread this mixture over the oat base.
  5. Top Layer: Sprinkle the remaining oat mixture over the strawberry filling and press down firmly.
  6. Bake: Bake for 45 minutes on the center rack until golden brown.
  7. Cool and Serve: Allow the bars to cool, then refrigerate until chilled. Serve plain or with toppings like peanut butter or powdered sugar.

Notes

  • For a twist, try adding a handful of chopped nuts to the oat mixture.
