These Strawberry Sugar Cookies are a delightful twist on classic sugar cookies, infused with the sweet and tangy flavor of freeze-dried strawberries. They’re perfect for any occasion, from afternoon tea to dessert.

Ingredients

Scale

Dry Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients:

  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 3 tablespoons freeze-dried strawberry powder

Instructions

  1. Preheat the Oven: Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Mix Dry Ingredients: In a bowl, whisk together flour, baking powder, and salt.
  3. Cream Butter and Sugar: In a large bowl, cream the butter and sugar until light and fluffy. Beat in the egg and vanilla extract.
  4. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Add Strawberry Powder: Gently fold in the freeze-dried strawberry powder until the dough is evenly colored.
  6. Shape and Bake: Roll the dough into 1-inch balls and place them on the prepared baking sheets, spaced about 2 inches apart. Flatten the balls slightly with the bottom of a glass. Bake for 10-12 minutes, or until the edges are lightly golden.
  7. Cool and Serve: Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • You can substitute fresh strawberries for the freeze-dried powder, but the texture and color of the cookies may vary.
  • Store the cookies in an airtight container to maintain freshness.
