Artichokes:
- 4 large artichokes (trimmed and stems removed)
- 2 tablespoons lemon juice
Breadcrumb Mixture:
- 1/4 cup extra virgin olive oil
- 10 cloves garlic (grated)
- 2 cups plain breadcrumbs
- 1 1/2 teaspoons dried Sicilian oregano (or Italian oregano)
- 1/2 cup parsley (minced)
- 1 1/4 cups Pecorino Romano (grated)
- 2 tablespoons lemon zest
- 1/2 teaspoon crushed hot red pepper flakes
- 1/4 cup dry white wine
- 1/2 cup extra virgin olive oil
- 1 teaspoon kosher salt (plus more to taste)
Sauce:
- 2 1/2 cups water
- 1 1/2 cups dry white wine
- 2 cloves garlic (minced)
- 1 teaspoon kosher salt
- 4 tablespoons butter
- 3 tablespoons lemon juice
- 1/4 cup parsley (minced)
- 3 tablespoons seasoned breadcrumbs (optional, if there are extra breadcrumbs add no more than 3 tablespoons to the sauce)
- Preheat Oven: Preheat oven to 400°F and set the rack to the middle level.
- Prepare Artichokes: Trim and prepare the artichokes, then soak in lemon water.
- Make Breadcrumb Mixture: Combine all breadcrumb ingredients and season to taste.
- Stuff Artichokes: Spread leaves apart and stuff artichokes generously.
- Arrange in Baking Dish: Place stuffed artichokes in a baking dish.
- Prepare Sauce: Combine sauce ingredients in the baking dish.
