Ingredients

Scale

Fruit

  • 1 lb. strawberries, hulled and quartered
  • 2 1/2 cups pineapple chunks
  • 6 oz. blueberries
  • 6 oz. blackberries
  • 23 kiwis, peeled and sliced
  • 3 cuties (small mandarins), peeled
  • 1 1/2 cups red grapes, cut in half

Other Ingredients

  • 1/2 cup frozen apple juice concentrate
  • 1 tablespoon honey
  • Zest of 1 lemon
  • Juice of 1 lemon
  • Ice cream or sorbet of choice (strawberry, orange sorbet, rainbow sorbet, or vanilla)

Instructions

  1. Prepare the Fruit: Wash all the fruit thoroughly. Hull and quarter the strawberries, peel and slice the kiwis, peel the cuties, and cut the grapes in half. Add all the prepared fruit to a large mixing bowl.
  2. Add Sweeteners and Flavor: To the bowl with fruit, add 1 tablespoon of honey, 1/2 cup of frozen apple juice concentrate, the zest of one lemon, and the juice of one lemon. This will add natural sweetness and bright citrus flavor to the salad.
  3. Mix and Chill: Gently toss the fruit and ingredients together until evenly combined. You can serve the salad immediately or cover it and refrigerate for a short while to let the flavors meld.
  4. Serve with Ice Cream or Sorbet: While the fruit salad is delicious on its own, it is enhanced by serving it alongside your choice of ice cream or sorbet, such as strawberry, orange sorbet, rainbow sorbet, or classic vanilla.

Notes

  • Use fresh, ripe fruit for the best flavor and texture.
  • You can substitute or add other fruits such as mango, peaches, or grapes depending on availability and preference.
  • For a vegan option, use sorbet or dairy-free ice cream.
  • Do not prepare too far in advance, as the fruit salad is best eaten fresh to avoid sogginess.
  • Lemon juice not only adds flavor but helps to keep the fruit from browning.
