Sugar Cookie Dough Cheesecake Batter

  • 4 (8 oz) blocks full fat cream cheese, room temp
  • 1 cup (200g) granulated sugar
  • 2 tbsp all-purpose flour
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract (optional)
  • 3/4 cup (185g) sour cream, room temp
  • 4 large eggs, room temp
  • 6 tbsp unsalted butter, room temp

Sour Cream Frosting

  • 1/3 cup (80g) sour cream
  • 1 1/2 cups (165g) powdered sugar
  • 1 tsp vanilla extract
  • 6 tbsp unsalted butter, room temp
  • Sprinkles, for topping

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 325°F. Grease a 9-inch springform pan and line the bottom with parchment paper to prevent sticking.
  2. Make Shortbread Crust: In a small bowl, whisk flour, powdered sugar, and salt together. Add cold cubed butter and use your hands to blend it thoroughly into the flour until crumbly. Mix in milk until dough is moist but still crumbly. Press the dough evenly into the bottom of the prepared pan and bake for 18-20 minutes. Keep the oven temperature steady at 325°F after baking the crust.
  3. Prepare Sugar Cookie Dough: Using the same bowl, combine room temperature butter and granulated sugar. Beat together until smooth using an electric mixer or fork.
