Cake Batter:

  • 4 large eggs (separated)
  • 1.5 cups non-fat Greek yogurt (350 g/12.5 oz)
  • ⅓ cup monkfruit sweetener (70 g/2.5 oz)
  • ⅓ cup cornstarch (40 g/1.4 oz)
  • 1 tsp vanilla extract (optional)

Instructions

  1. Separate Egg Whites and Yolks: Separate yolks from egg whites, ensuring no yolk gets into the whites.
  2. Beat Egg Whites: Beat egg whites in an electric mixer until stiff peaks form.
  3. Cream Egg Yolks: Combine monkfruit sweetener, vanilla extract with egg yolks and beat until light and fluffy.
  4. Add Yogurt: Mix in the Greek yogurt with the creamed egg yolks.
  5. Combine Cornstarch: Sift in cornstarch and fold into the yogurt mixture.
  6. Fold in Egg Whites: Gently fold the stiff egg whites into the yogurt batter.
  7. Prepare Baking Dish: Line a 7×11-inch dish with parchment paper and pour in the batter.
  8. Bake: Place the dish in a larger baking sheet with water, then bake at 330F (160C) for 45 minutes. Raise the temperature to 350F (180C) and bake for an additional 15 minutes.
  9. Cool: Turn off the oven, crack the door open, and let the cake cool for 1-2 hours.
