Graham Cracker Crust
- 1 ½ cups graham crackers (12 full sheets)
- 3 tbsp granulated sugar
- 6 tbsp unsalted butter (melted)
Ube Pie Filling
- 1 lb grated ube (frozen, 454 grams)
- ¾ cup light brown sugar
- 2 eggs
- ¼ cup coconut cream
- 4 tbsp unsalted butter (melted)
- 1 tsp ground cinnamon
- ½ tsp ube extract
- ¼ tsp salt
- Preheat Oven: Preheat your oven to 350 degrees F (177 degrees C) to prepare for baking the crust and pie.
- Prepare Graham Cracker Crust: Place 1 ½ cups of graham crackers into a food processor and pulse until finely crumbed. Transfer crumbs to a bowl and mix in 2 tbsp of granulated sugar. Pour in 6 tbsp melted unsalted butter, stirring until the mixture resembles wet sand.
- Form and Bake Crust: Press the graham cracker crumb mixture evenly into a 9-inch pie pan. Bake the crust for 8 minutes, then set aside to cool slightly.
- Cook Ube: Place 1 lb grated frozen ube in a microwave-safe bowl and microwave for 3-4 minutes until softened. Take 1 ½ cups of the cooked ube and transfer to a blender or food processor for filling preparation.
- Make Ube Filling: To the blender with cooked ube, add ¾ cup light brown sugar, 2 eggs, ¼ cup coconut cream, 4 tbsp melted butter, 1 tsp ground cinnamon, ½ tsp ube extract, and ¼ tsp salt. Blend all ingredients until smooth and creamy.
- Fill and Bake Pie: Pour the ube filling into the pre-baked graham cracker crust, smoothing the top. Bake the pie at 350°F (177°C) for 35-40 minutes, or until a toothpick inserted in the center comes out clean.
- Cool and Serve: Allow the pie to cool and set for at least one hour before slicing and serving to enhance flavor and texture.
