Ingredients

Scale

Main Ingredients

  • 2 pounds tater tots, frozen
  • ½ pound ground beef
  • 2 tablespoons taco seasoning

Beans & Veggies

  • ½ cup refried beans
  • ½ cup corn
  • ½ cup black beans
  • ½ cup salsa

Cheeses

  • ½ cup sharp cheddar cheese
  • ½ cup monterey jack cheese

Toppings

  • Pico de gallo
  • Sour cream
  • Cilantro
  • Avocado
  • Jalapeño

Instructions

  1. Prep: Preheat your oven to 425°F (220°C) and line a sheet pan with parchment paper. Spread the frozen tater tots evenly on the pan to ensure they bake uniformly.
  2. Bake the Tots: Place the sheet pan in the oven and bake the tater tots for 10 minutes. After 10 minutes, toss the tots to turn them over and continue baking for another 10 minutes until they are golden and crispy.
  3. Cook the Beef: While the tater tots bake, heat a skillet over medium-high heat. Add the ground beef and cook thoroughly, breaking it up until it is evenly browned and cooked through.
  4. Drain and Season: Drain the excess grease from the ground beef to remove extra fat. Then stir in the taco seasoning evenly to infuse the meat with classic taco flavors.
  5. Assemble Nachos: Once the tater tots finish baking, set your oven to broil. On the same sheet pan, layer the cooked ground beef, refried beans, corn, black beans, salsa, and sprinkle evenly with sharp cheddar and monterey jack cheeses.
  6. Broil: Place the loaded sheet pan under the broiler for about 5 minutes or until the cheeses melt and become bubbly and slightly golden, watching carefully to avoid burning.
  7. Garnish and Serve: Remove from the oven and top with fresh garnishes such as pico de gallo, sour cream, cilantro, sliced avocado, and jalapeño slices according to your preference. Serve immediately while warm and melty.

Notes

  • For extra crispiness, toss the tater tots halfway through baking.
  • Use low-fat or lean ground beef to reduce fat content if desired.
  • Customize the toppings to suit your taste or dietary needs, such as omitting jalapeños for less heat.
  • Refried beans can be substituted with black bean or pinto bean dip for variation.
  • Serve with additional salsa or hot sauce on the side for extra flavor.
