For the Meatballs:

  • 16 oz lean ground turkey
  • 1/3 cup panko bread crumbs (or gluten-free crumbs)
  • 1/4 cup green onion, finely chopped
  • 1 large egg
  • 1 teaspoon freshly grated ginger (or 1/4 teaspoon ground ginger)
  • 1 garlic clove, pressed or grated
  • 2 teaspoons toasted sesame oil
  • 1/4 teaspoon fine sea salt
  • 1/4 teaspoon ground black pepper

For the Teriyaki Sauce:

  • 1/4 cup light brown sugar, lightly packed
  • 2 tablespoons hoisin sauce (or gluten-free hoisin)
  • 1 tablespoon soy sauce (or gluten-free tamari)
  • 1/2 tablespoon toasted sesame oil
  • 1 medium garlic clove, minced
  • 1/2 teaspoon fresh ginger (or 1/8 teaspoon ground ginger)
  • To Serve:

    • Sesame seeds and green onion for garnish

Instructions

  1. Prepare the Oven: Line a 17×12-inch rimmed baking sheet with parchment paper or foil. Preheat the oven to 400˚F.
  2. Make the Meatball Mixture: In a large bowl, combine ground turkey, bread crumbs, green onion, egg, ginger, garlic, sesame oil, salt, and pepper. Mix gently until just combined.
  3. Shape the Meatballs: Roll the mixture into meatballs and place them on the baking sheet.
  4. Bake: Bake meatballs for 13–18 minutes until cooked through.
  5. Make the Teriyaki Sauce: Combine brown sugar, hoisin sauce, soy sauce, sesame oil, garlic, and ginger in a saucepan. Simmer until slightly thickened.
  6. Toss and Serve: Transfer meatballs to a bowl, pour the teriyaki sauce over them, and garnish with sesame seeds and green onions. Serve over rice or noodles.
