Melon Ice Cream Ingredients

  • 3 tablespoons lemon juice
  • 3 soft dates

Instructions

  1. Blend the ingredients: Combine the honeydew melon cubes, soy or coconut yogurt, lemon juice, soft dates, and optional lemon zest in a blender. Blend until the mixture is completely smooth and creamy.
  2. Freeze the mixture: Pour the blended mixture into a Ninja Creami container. Place the container in the freezer and freeze for at least 12 hours until fully solidified.
  3. Prepare for processing: Remove the frozen container from the freezer and let it sit at room temperature for approximately 10 minutes to soften slightly before processing.
  4. Process in Ninja Creami: Using the Ninja Creami machine, process the mixture according to the ‘light ice cream’ setting instructions to create a smooth texture. If the ice cream appears crumbly or too firm, add a splash of plant-based milk and re-spin to improve creaminess.
