Marinade:

  • 2 pounds boneless, skinless chicken thighs
  • 2 stalks lemongrass
  • 4 cloves garlic
  • 1 shallot
  • 2 tablespoons fish sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes

For Cooking:

  • 2 tablespoons vegetable oil

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C).
  2. Prepare lemongrass: Trim and finely chop the tender white parts of the lemongrass.
  3. Prep garlic and shallot: Mince the garlic and shallot.
  4. Make marinade: In a bowl, mix lemongrass, garlic, shallot, fish sauce, soy sauce, honey, sesame oil, black pepper, and red pepper flakes.
  5. Marinate chicken: Cut chicken thighs, coat in marinade, cover, and refrigerate for at least 30 minutes.
  6. Heat oil: Heat vegetable oil in a skillet.
