Instructions

  1. Fry the Shallots and Garlic: Place the thinly sliced shallots and garlic cloves in a cold medium skillet, then pour in enough olive oil to fully cover them. Set the pan over medium-high heat for 1 minute to gradually warm the oil, then reduce the heat to low. Fry gently, separating the slices with chopsticks or a spatula, until the shallots and garlic turn lightly golden and crispy, about 12-15 minutes. Remove from the skillet and transfer to a paper towel-lined plate to drain and cool. Reserve 2 tablespoons of the flavored oil for the butter. Once cooled, roughly chop the crispy shallots and garlic.
  2. Whip the Butter: In a mixing bowl, combine the room temperature unsalted butter, heavy cream, lemon zest, and 1-2 tablespoons of the reserved garlic shallot oil. Using a hand mixer or stand mixer, whip the mixture until light and fluffy, about 2-3 minutes, making sure to scrape down the sides of the bowl as needed to incorporate all ingredients evenly.
  3. Assemble and Serve: To serve, spoon a portion of the whipped garlic butter into a serving dish. Sprinkle some of the crispy chopped shallots and garlic on top. Repeat layering with butter and shallots until all the butter has been used, creating a stacked tower.
