Instructions

  1. Roast the Delicata Squash: Preheat your oven to 400°F (200°C). Toss the delicata slices with olive oil and a pinch of salt, then spread them out in a single layer on a baking sheet. Bake for 15-20 minutes until the slices are fork-tender. Remove from the oven and let them cool slightly.
  2. Prepare the Tofu: Drain excess liquid from the tofu package. Cut the tofu into strips roughly 3/4 inch thick and about 1 inch by 4 inches in size, creating uniform pieces for the rolls.
  3. Soften the Rice Paper Wrappers: Fill a shallow dish with very warm water. Dip one rice paper wrapper into the water and gently shake it until it softens but is not overly limp. Carefully remove it, allowing some excess water to remain, and place it flat on a clean, lightly oiled surface or damp kitchen towel to prevent sticking.
  4. Assemble the Salad Rolls: Lay the softened rice paper flat. On the lower third of the wrapper, place one tofu strip, then add a small handful of the roasted delicata squash and the raw shredded vegetables (carrots, cabbage, watermelon radish, Brussels sprouts), and a few cilantro leaves. Optionally, add a small spoonful of peanut sauce or a dash of fish sauce inside the wrapper for extra flavor.
  5. Roll the Wrapper: Fold the bottom edge of the wrapper up to cover the fillings, roll it snugly towards the top, folding in the sides as you go, until the roll is completely sealed.
  6. Repeat: Continue softening wrappers and assembling rolls with the remaining ingredients until all are used.
