Yogurt Mixture
- 16 oz Plain non-fat Greek yogurt
- 2 packets no-calorie sweetener like Truvia (or 3 tablespoons honey as substitute)
- 1 Tablespoon sugar-free coffee syrup – French vanilla (or 1 Teaspoon vanilla extract as substitute)

- Mix the Yogurt Base: In a medium bowl, combine the Greek yogurt, no-calorie sweetener (or honey if using), and the sugar-free French vanilla coffee syrup or vanilla extract. Stir thoroughly with a spoon until the mixture is smooth and evenly blended.
- Fill Half the Molds: Pour half of the yogurt mixture into the ice pop molds. Add a few whole blueberries and raspberries into each mold, then use a toothpick to gently push the berries down to the bottom of the molds for even berry distribution.
- Pre-Freeze: Place the molds in the freezer for about 15 minutes to allow the base to harden slightly, which helps keep the berries in place for the next layer.
- Prepare the Berry Puree Layer: While the molds are pre-freezing, blend the remaining Greek yogurt with the remaining blueberries and raspberries until smooth to create a creamy berry yogurt puree.
- Finish Filling and Freeze: Pour the berry yogurt puree into the molds over the semi-frozen layer. If desired, sprinkle granola on top for added texture. Insert sticks and freeze the popsicles for at least 4 to 5 hours until fully set.
