Ingredients

Scale

Eggs and Filling

  • 8 large eggs, divided
  • 2 tbsp. mayonnaise
  • 2 1/2 tsp. sweet pickle relish
  • 1 1/2 tsp. Dijon mustard, divided
  • 1 1/2 tsp. yellow mustard, divided
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Breading

  • 1/2 cup (60 g) all-purpose flour
  • 2 eggs (from 8 total), lightly beaten with 1/2 tsp. Dijon mustard and 1/2 tsp. yellow mustard
  • 1/2 cup finely ground Ritz cracker crumbs (from 15 to 20 crackers)
  • 1/2 cup panko bread crumbs
  • 1/4 tsp. garlic powder
  • 1/2 tsp. dried parsley flakes
  • Pinch of cayenne pepper (optional)
  • 3/4 tsp. kosher salt
  • 1/4 tsp. freshly ground black pepper
  • Olive oil or neutral cooking spray, for spraying

For Garnish

  • Ground paprika, for dusting
  • Fresh dill, for serving

Instructions

  1. Cook the eggs: Place 6 eggs in the air fryer basket and cook at 250°F for 17 minutes. Immediately transfer the eggs to an ice bath to cool completely, then peel the shells off carefully.
  2. Prepare the yolk filling: Slice the peeled eggs in half lengthwise, scoop out the yolks into a medium bowl, and set the egg whites aside. Add mayonnaise, sweet pickle relish, 1 tsp. Dijon mustard, and 1 tsp. yellow mustard to the yolks. Mash and stir with a fork until very smooth and creamy. Season with kosher salt and freshly ground black pepper to taste. Transfer the mixture into a piping bag or a gallon zip-top bag with a small tip. Refrigerate until ready to use.
  3. Prepare the breading stations: Pour the all-purpose flour into a shallow bowl. In a second shallow bowl, beat the remaining 2 eggs with 1/2 tsp. Dijon mustard, 1/2 tsp. yellow mustard, and a pinch of salt and black pepper. In a third shallow bowl, mix the finely ground Ritz crackers, panko breadcrumbs, garlic powder, dried parsley flakes, cayenne pepper if using, 3/4 tsp. salt, and 1/4 tsp. black pepper.
  4. Bread the egg whites: Working one egg white at a time, dip into the flour, then into the egg mixture, allowing excess to drip off. Coat generously in the breadcrumb mixture, pressing gently to adhere. Place the coated egg whites on a baking sheet and lightly spray both sides with olive oil or neutral cooking spray.
  5. Air fry the breaded eggs: Arrange the eggs in the air fryer basket, ensuring they are not overcrowded. Cook at 390°F, flipping the eggs halfway through, for 8 to 10 minutes until they become deeply golden and crispy. Let cool slightly before handling.
  6. Assemble and serve: Arrange the crispy egg whites on a serving platter. Pipe the creamy yolk filling into each egg white half. Dust with ground paprika and garnish with fresh dill. Serve immediately for the best texture and flavor.

Notes

  • Use an air fryer with enough space to avoid overcrowding, ensuring even cooking and crispiness.
  • Cooling the eggs in an ice bath immediately after cooking helps with easier peeling.
  • Feel free to adjust the amount of mustard or pickle relish in the yolk filling to taste.
  • If you don’t have Ritz crackers, substitute with finely crushed buttery crackers.
  • Cooking times may vary slightly depending on air fryer model.
  • The recipe yields 6 deviled eggs made from 6 cooked eggs; leftover eggs can be used for other dishes.
