Phyllo and Butter

  • 1 (16 oz) package phyllo dough
  • 46 oz unsalted butter, melted, divided

Filling

  • 3 oz pancetta, diced
  • 10 sage leaves, chiffonade
  • ¼ cup dried cranberries
  • ¼ cup chopped pecans
  • 1 tbsp chili crisp
  • ⅓ cup raspberry preserves
  • 3 tbsp chives, chopped
  • 8 oz feta cheese, sliced lengthwise into long rectangles
  • 10 tbsp honey (approx. ½1 tbsp per bite, to taste)

Instructions

  1. Preheat the oven: Set your oven to 400℉ (204℃) to prepare for baking the appetizer.
  2. Prepare the phyllo dough: Fold the phyllo sheets in half lengthwise and cut. Roll the folded half back up in the plastic it comes in and store for later use to keep it moist.
  3. Butter the phyllo layers: Brush melted butter between every few layers of phyllo (approximately every 3 sheets) to ensure flakiness and richness. Reserve some melted butter for later use.
  4. Cook the pancetta and sage: Heat a pan over medium-low heat, add diced pancetta and let it render the fat until halfway cooked. Add chiffonade sage leaves to the pancetta fat and cook until crisp.
  5. Prepare the savory mixture: In a food processor, combine cranberries, pecans, chili crisp, sautéed pancetta, and sage. Pulse several times until combined but still slightly chunky.
  6. Assemble the filling on phyllo: Spread raspberry preserves evenly over the phyllo sheets, then layer the cranberry pecan mixture on top, followed by a sprinkle of chopped chives.
  7. Add feta and roll: Place the feta cheese rectangles along the wider edge of the phyllo sheets and roll up tightly, brushing butter on the edges to seal the rolls.
  8. Slice into rounds: Using a sharp knife, slice the rolled phyllo into 12 even rounds.
  9. Prepare the muffin tin: Brush ½ tablespoon of melted butter in each cup of a 12-cup muffin tin to prevent sticking.
  10. Place phyllo bites and butter top: Place each phyllo round into a muffin cup and brush an additional ½ tablespoon of melted butter over the top of each piece.
  11. Bake the appetizer: Bake in the preheated oven for 20-25 minutes until the phyllo is golden and crisp.
  12. Finish with honey: Remove from oven and drizzle each baked bite with ½ to 1 tablespoon of honey for a perfect balance of sweet and savory flavors. Serve warm and enjoy!
