  • 1/4 cup (60ml) milk (any kind), at room temperature
  • 2 and 1/2 Tablespoons fresh lemon juice
  • 1 and 1/2 cups (250g) fresh or frozen blackberries (see Note)

Icing

  • 1 cup (120g) confectioners’ sugar, sifted
  • 1 Tablespoon (15ml) lemon juice
  • 1 Tablespoon (15ml) milk (any kind)
  • 2 teaspoons blackberry jam, or 34 fresh blackberries

Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (218°C). Prepare a 12-count muffin pan by spraying with nonstick spray or lining with cupcake liners. Because this recipe makes up to 14 muffins, you may need a second pan or plan to bake in batches. Set the pan(s) aside.
  2. Combine Dry Ingredients: In a large bowl, whisk together the all-purpose flour, poppy seeds, baking soda, baking powder, and salt until evenly mixed. Set aside.
  3. Cream Butter and Sugars: Using a handheld or stand mixer with a paddle attachment, beat the softened unsalted butter, granulated sugar, and brown sugar on medium-high speed until the mixture is smooth and creamy, approximately 3 minutes. This step is crucial for light muffins.

Total baking time is about 21–23 minutes.
  9. Cool the Muffins: Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
  10. Prepare the Icing: In a bowl, whisk together sifted confectioners’ sugar, lemon juice, and milk until smooth.
