Instructions

  1. Prepare the oven and potatoes: Arrange a rack in the center of the oven and preheat to 425°F. Scrub and dry the potatoes thoroughly. Cut off about 1/4 inch from one long side of each potato to stabilize them on the cutting board.
  2. Slice the potatoes: Place a potato cut side down between two chopsticks on the cutting board. Make 1/4-inch slices vertically, ensuring not to cut all the way through by using the chopsticks as a guard. Rotate the potato 90 degrees and make perpendicular 1/4-inch slices to create a grid-type cut. Repeat with all potatoes.
  3. Season the potatoes: Place the potatoes on a parchment-lined baking sheet. Lightly brush the potatoes with extra-virgin olive oil and season generously with kosher salt.
  4. Bake the potatoes: Bake in the preheated oven for 40 to 50 minutes, until the inside is tender and the outside is crisp and golden.
  5. Add cheese and broil: Switch the oven to the broiler setting on high. Sprinkle shredded cheddar cheese evenly over the potatoes. Broil for 30 to 60 seconds, watching closely, until the cheese has melted and is bubbly.
