  • 3 cups shredded Monterey Jack cheese (about 8 oz)

Instructions

  1. Preheat and prepare filling: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prevent sticking. In a large bowl, thoroughly combine the shredded cooked chicken with softened cream cheese, Buffalo sauce, and thinly sliced scallions. Season generously with kosher salt and freshly ground black pepper, mixing until all ingredients are well incorporated.
  2. Prepare cheese and tortillas: In a separate medium bowl, mix together the shredded cheddar and Monterey Jack cheeses. Cut each small flour tortilla in half to create 48 tortilla halves. On one half of a tortilla, sprinkle about 1 tablespoon of the cheese mixture, then add roughly 1 tablespoon of the chicken mixture in the center.
  3. Fold tortillas into cones: Starting at the cut edge of the tortilla half, fold the bottom quarter of the tortilla into a triangle shape. Then continue to roll the tortilla into a cone or crescent shape, enclosing the filling securely inside. Repeat this process with all the tortilla halves, using the remaining cheese and chicken mixture as you go. Reserve a small amount of cheese for topping.
  4. Arrange the quesadilla ring: Place a 3-inch-wide cup or bowl in the center of the prepared baking sheet. Arrange the rolled tortillas around this center cup with the smaller pointed ends facing the cup, forming a circular ring shape. Once the first layer is complete, sprinkle some of the reserved cheese mixture over the top. Layer two more rounds of rolled tortillas on top, sprinkling cheese in between each layer. Carefully remove the center cup after all layers are assembled.
  5. Bake to melty perfection: Bake the quesadilla ring in the preheated oven for 20 to 25 minutes, or until the cheese on top is melted and bubbly and the center filling is warmed through.
