Brownie Batter

  • 1/4 cup brown sugar
  • 2/3 cup unsweetened cocoa powder
  • 1 1/2 teaspoons vanilla extract
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/3 cup chocolate chips

Instructions

  1. Preheat oven: Grease a 24-cup mini muffin pan with a small amount of butter or non-stick spray and preheat the oven to 350°F.
  2. Melt butter: In a medium saucepan over medium heat, melt 10 tablespoons of unsalted butter. Once melted, stir in granulated sugar, brown sugar, unsweetened cocoa powder, vanilla extract, and salt. Remove the pan from heat and let the mixture cool for about 5 minutes.
  3. Whisk batter: Gradually whisk the eggs into the cooled butter mixture until the batter is smooth. Next, stir in the all-purpose flour and chocolate chips, mixing just until no streaks of flour remain.
  4. Bake: Scoop the batter into the prepared mini muffin pan, filling each cup almost full. Bake for 12-16 minutes, or until the brownie bites are set but still fudgy.
