Ingredients

Scale

Main Ingredients

  • 1 tablespoon olive oil
  • 1 pound lean ground beef
  • Salt (to taste)
  • Freshly ground black pepper (to taste)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 4 cups chopped green cabbage
  • 2 medium carrots, peeled, quartered, and sliced
  • 4 cups low-sodium beef broth
  • 24 ounces tomato sauce
  • 2 teaspoons Worcestershire sauce
  • ½ cup uncooked long-grain white rice
  • 2 bay leaves
  • 2 tablespoons light brown sugar

Garnish

  • Fresh parsley, chopped

Instructions

  1. Brown beef: Heat olive oil in a large pot over medium-high heat. Add the ground beef, season with salt and freshly ground black pepper, and cook until browned and crumbled, about 5-6 minutes.
  2. Sauté vegetables: Add the finely diced onion and minced garlic to the browned beef and sauté for about 2 minutes until the onion softens. Then add chopped cabbage and sliced carrots, cooking for an additional 3 minutes to soften slightly.
  3. Simmer soup: Pour in the low-sodium beef broth, tomato sauce, and Worcestershire sauce. Stir in the uncooked long-grain white rice, bay leaves, and brown sugar. Bring the soup to a gentle simmer, cover, and cook for 25-30 minutes or until the rice and vegetables are tender.
  4. Serve: Remove the bay leaves, adjust seasoning with salt and pepper as needed, and ladle the hot soup into bowls. Garnish with freshly chopped parsley and serve immediately.

Notes

  • For a lower-carb version, substitute the white rice with cauliflower rice or omit it entirely.
  • Ground turkey or chicken can be used in place of ground beef for a leaner option.
  • If you prefer a spicier kick, add a pinch of red pepper flakes during the sauté step.
  • Leftovers reheat well and the flavors deepen after a day, making this soup great for meal prep.
