For the Croutons
- 1 cup white bread, cut into 1/2” cubes

- 1 large chicken breast (about 1/2 lb.), sliced in half lengthwise
- 1 tablespoon extra-virgin olive oil
- 1/2 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Kosher salt
- 1/2 teaspoon freshly ground black pepper
For the Wraps
- 1 head romaine lettuce, chopped
- 2 tablespoons to 1/4 cup store-bought or homemade Caesar dressing
- 1/4 cup finely grated Parmesan cheese
- 4 flour tortillas
- Make the Croutons: Preheat your oven to 375°F (190°C). On a rimmed baking sheet, toss the bread cubes with 1 teaspoon olive oil, 1/4 teaspoon garlic powder, 1/4 teaspoon salt, and 1/4 teaspoon pepper. Spread them out in a single layer and bake for 10 to 12 minutes, or until golden brown and crispy. Remove from oven and set aside to cool.
- Prepare the Chicken: Season the chicken breast slices on all sides with dried oregano, remaining 1/2 teaspoon garlic powder, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat until shimmering. Add the chicken and cook, turning occasionally, until both sides have a nice sear and the internal temperature reaches 165°F (74°C), about 8 minutes per side. Transfer the chicken to a cutting board and let it rest until cool enough to handle.
- Slice the Chicken: Once the chicken is cool, slice it into strips suitable for wrapping.
- Assemble the Salad: In a large bowl, combine the sliced chicken, homemade croutons, chopped romaine lettuce, grated Parmesan, and your desired amount of Caesar dressing (between 2 tablespoons and 1/4 cup). Toss everything together well. Season with additional salt and pepper to taste if needed.
- Build the Wraps: Divide the chicken Caesar salad mixture evenly among the 4 flour tortillas. Wrap each tortilla burrito-style, folding in the sides and rolling tightly. Slice each wrap in half for easier eating and serve immediately.
