4.5 from 120 reviews

Deliciously rich chocolate brownies topped with fresh strawberries and a smooth chocolate ganache, combining the classic fudgy texture with a fresh fruity twist for an indulgent dessert treat.

Ingredients

Scale

Brownie Base

  • 1 box of your favorite brownie mix (plus required ingredients listed on the box, such as eggs, oil, and water)

Chocolate Ganache

  • 2 cups semi-sweet chocolate chips
  • 1 cup heavy cream
  • 1 tablespoon unsalted butter

Topping

  • 1 lb fresh strawberries (washed and hulled)

Instructions

  1. Make the brownies: Preheat the oven to 350°F and line an 8×8 inch pan with parchment paper. Prepare the brownie mix according to the package instructions by combining the brownie mix with required ingredients such as eggs, oil, and water.
  2. Bake the brownies: Pour the batter into the prepared pan and bake according to the package instructions. Check for doneness by inserting a toothpick into the center; it should come out with a few moist crumbs. Once done, allow the brownies to cool completely on a wire rack while still in the pan.
  3. Prepare the chocolate ganache: In a large microwave-safe measuring cup, heat the heavy cream and butter together for 1-2 minutes until steamy but not boiling. Pour the hot cream mixture over the chocolate chips and let sit for 4-5 minutes to melt, then whisk until smooth and glossy. If needed, microwave in 15-second bursts until fully melted and combined.
  4. Assemble the brownies: Once cooled, arrange the hulled fresh strawberries evenly over the brownies. Pour the chocolate ganache over the strawberries and spread gently to cover.
  5. Chill and serve: Place the pan in the fridge for 2-3 hours to allow the ganache to set firmly. Use a sharp knife warmed under hot water to slice the brownies cleanly and enjoy.

Notes

  • Use a warmed knife to slice the brownies after chilling to get clean cuts without cracking the ganache.
  • Make sure the brownies are completely cooled before adding the strawberries and ganache to prevent melting.
  • You can substitute semi-sweet chocolate chips with dark or milk chocolate chips depending on your preference.
  • Fresh strawberries are best for the topping to provide a juicy contrast to the rich chocolate.
