A vibrant and festive Christmas Red Jam made with fresh berries, spiced with cinnamon and cloves, perfect for holiday breakfasts and gifts.

Ingredients

Scale

Fruit Base

  • 2 cups fresh berries (such as cranberries, raspberries, or strawberries)

Sweeteners & Spices

  • 2 cups sugar
  • 1 tablespoon citrus zest (optional)
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground cloves

Thickening Agent & Liquid

  • 1 packet pectin
  • ½ cup water

Instructions

  1. Prepare the Berries: Wash and clean the fresh berries thoroughly, removing any stems, leaves, or debris to ensure a smooth jam.
  2. Combine Ingredients: In a large saucepan, add the cleaned berries, sugar, water, and optional citrus zest, mixing gently to combine.
  3. Boil Mixture: Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring occasionally to help dissolve the sugar completely.
  4. Add Spices and Pectin: Stir in the ground cinnamon, ground cloves, and the packet of pectin; continue to simmer the mixture until it thickens and reaches the desired jam consistency.
  5. Check Consistency: Test the jam by spooning some onto the back of a cold spoon; once it coats the back without running, it’s ready to be removed from the heat.
  6. Cool and Store: Allow the jam to cool slightly, then transfer it into sterilized jars, seal them tightly, and let the jars cool completely before placing them in the refrigerator.

Notes

  • Using citrus zest adds a bright, fresh flavor but can be omitted if unavailable.
  • Ensure jars are properly sterilized to prolong shelf life and avoid contamination.
  • Adjust sweetness by reducing or increasing sugar as desired, keeping in mind structural impacts on the jam.
  • Pectin ensures the jam sets properly; low-pectin fruit may require more or longer cooking.
  • Store the jam in the refrigerator and consume within a month for best quality.
