Instructions

  1. Prepare the dressing: In a large bowl, whisk together olive oil, fresh lime juice, reduced-sodium soy sauce, light brown sugar, and ground cumin until well combined. Stir in chopped fresh cilantro and season with kosher salt and freshly ground black pepper to taste. Set aside half of this dressing for serving later.
  2. Marinate the chicken: Add the cut chicken pieces, finely grated ginger, and garlic to the remaining dressing in the bowl. Toss thoroughly to coat all the chicken evenly. Cover the bowl and let the chicken marinate for at least 30 minutes at room temperature or up to 4 hours if refrigerated.
