Chicken Burgers

  • 3 Tbsp. unsalted butter, divided
  • 1/2 medium yellow onion, finely chopped
  • Pinch of granulated sugar
  • Kosher salt, to taste
  • 2 lb. (93% lean) ground chicken
  • 3/4 cup panko breadcrumbs
  • 2 Tbsp. mayonnaise
  • 1 Tbsp. Worcestershire sauce
  • 1 1/2 tsp. garlic powder
  • Freshly ground black pepper, to taste
  • 1 Tbsp. extra-virgin olive oil
  • 6 slices cheddar cheese
  • 6 brioche burger buns, split, lightly toasted
  • Butterhead lettuce leaves
  • Thinly sliced tomato
  • Thinly sliced red onion

Instructions

  1. Prepare Burger Sauce: In a medium bowl, combine mayonnaise, ketchup, chopped gherkins, gherkin juice, yellow mustard, Worcestershire sauce, kosher salt, smoked paprika, black pepper, and garlic powder. Mix well until smooth. Cover and refrigerate until ready to use. This sauce can be made up to one week in advance.
  2. Caramelize Onions: Heat 1 tablespoon of butter in a large skillet over medium-high heat. Add finely chopped yellow onions, a pinch of granulated sugar, and a pinch of kosher salt. Stir occasionally, adding a splash of water if onions brown too quickly. Cook until onions are softened and golden brown, about 10 minutes. Transfer onions to a large bowl and let cool slightly. Do not clean skillet; reserve it for cooking burgers.
  3. Make Burger Mixture: To the bowl with cooled onions, add ground chicken, panko breadcrumbs, mayonnaise, Worcestershire sauce, garlic powder, salt, and freshly ground black pepper. Gently mix together with your hands or a wooden spoon, being careful not to overmix to keep the burgers tender.
  4. Shape Patties: Form the mixture into 6 evenly sized patties about 1/2-inch thick. Press an indentation with your thumb into the center of each patty to prevent shrinking during cooking.
  5. Cook Burgers: Heat olive oil and 1 tablespoon of butter in the reserved skillet over medium-high heat until the butter is bubbling. Add 3 patties and cook for 8 to 10 minutes, flipping halfway through, until the internal temperature reaches 165°F. Avoid pressing the patties to ensure they remain juicy and well-seared.
  6. Melt Cheese: Place a slice of cheddar cheese on each patty, cover the skillet, and cook for 30 to 60 seconds until the cheese melts. Transfer the cooked patties to a plate and tent with foil to keep warm. Repeat cooking the remaining 3 patties with the last tablespoon of butter (no additional oil needed).
