  • 2 tsp vanilla flavoring

  • 2 & 3/4 cup all-purpose flour
  • 1 tbsp cornstarch
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 & 1/4 tsp cinnamon
  • 1/4 tsp salt

Churro Buttercream:

  • 1 stick butter
  • 1 & 1/2 cup powdered sugar
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 2 tsp vanilla flavoring
  • 23 tbsp heavy cream

Instructions

  1. Cinnamon Sugar Coating: In a medium bowl, mix 1/4 cup granulated sugar and cinnamon. Set aside.
  2. Prepare Cookie Dough: Cream butter, brown sugar, and granulated sugar until light and creamy. Add egg, egg yolk, lemon juice, and vanilla; mix. Add flour, cornstarch, baking powder, baking soda, cinnamon, and salt; mix until combined.
  3. Shape Cookies: Scoop dough into balls, roll in cinnamon sugar, flatten, and bake at 350F for 10 minutes.
  4. Prepare Churro Buttercream: Beat butter, sugars, cinnamon, vanilla, and cream until fluffy.
  5. Frost Cookies: Pipe or spread buttercream on cooled cookies.
