Instructions

  1. Make the vinaigrette: In a large bowl, whisk together the extra-virgin olive oil, vinegar, kosher salt, freshly ground black pepper, and garlic powder until well combined to create the dressing base.
  2. Combine the vegetables: Add the halved cherry tomatoes, thinly sliced cucumber, and thinly sliced red onion to the bowl with the vinaigrette. Toss well to evenly coat all the vegetables with the dressing.
  3. Let flavors meld: Allow the salad to sit at room temperature for at least 15 minutes to let the flavors develop. Alternatively, cover and refrigerate the salad for up to 12 hours for a more marinated depth of flavor.
