  • 1/2 cup heavy cream (remaining from 2 1/4 cups divided)
  • 2 tbsp. coffee liqueur
  • 2 tbsp. vodka
  • 1/2 tsp. kosher salt (remaining from 1 tsp. divided)

Assembly

  • 16 sheets chocolate graham crackers, divided
  • Unsweetened cocoa powder, for dusting
  • Chocolate-covered espresso beans, for garnish

Instructions

  1. Prepare Cream Cheese Mixture: In a large bowl, use a handheld mixer on medium-high speed to beat the softened cream cheese, confectioners’ sugar, instant espresso powder, and 1/2 tsp kosher salt until smooth, fluffy, and the espresso powder is fully dissolved, about 2 to 3 minutes. With the mixer running, slowly add 1 3/4 cups heavy cream and beat until incorporated and the mixture is light and airy. Refrigerate until ready to assemble.
  2. Make Chocolate Ganache: Place dark chocolate chips in a medium heatproof bowl. In a small saucepan over medium-low heat, warm the remaining 1/2 cup heavy cream until just simmering. Stir in the coffee liqueur, vodka, and remaining 1/2 tsp kosher salt and return to a simmer. Pour this warm cream mixture over the chocolate chips and let sit for 1 to 2 minutes. Then stir gently with a rubber spatula until the chocolate melts completely and the ganache is smooth.
  3. Assemble the Cake Layers: Line a deep 9″ x 5″ loaf pan with plastic wrap, leaving about 3 inches of overhang on the long sides for easy removal. Arrange 4 sheets of chocolate graham crackers on the bottom, trimming with a sharp knife to fit the pan snugly. Pour about one-third of the chocolate ganache (approximately 1/2 cup) over the crackers and spread evenly with an offset spatula. Then top with one-quarter of the coffee cream mixture (about 1 cup), spreading it evenly. Repeat the chocolate ganache and coffee cream layering two more times, finishing by topping with the remaining 4 sheets of graham crackers. Transfer the remaining 1 cup coffee cream to an airtight container and refrigerate. Cover the loaf pan with the plastic wrap overhang and chill the cake for at least 3 hours or up to overnight.
  4. Unmold and Frost Cake: Remove the cake from the refrigerator. Unwrap the plastic overhang and invert the cake onto a serving platter, removing the plastic wrap completely. Using an offset spatula, spread the reserved coffee cream evenly over the top and sides of the cake. Freeze the cake for about 5 minutes to set the frosting.
  5. Decorate and Serve: Place a sheet of parchment paper diagonally across the top of the cake, gently pressing it into the frosting so it adheres. Using a fine-mesh sieve, dust half of the exposed cake surface with unsweetened cocoa powder. Carefully remove the parchment paper to reveal a clean dividing line. Decorate the other half with chocolate-covered espresso beans for contrast. Serve the cake cold and enjoy the espresso martini-inspired flavors.
