Ingredients

Scale

Marinade

  • 1/4 cup hoisin sauce
  • 3 tablespoons reduced-sodium soy sauce
  • 1 tablespoon plus 2 teaspoons sesame oil
  • 1 inch piece ginger, grated or minced
  • 2 cloves garlic, grated or minced

Main Ingredients

  • 1 lb chicken thighs, cut into 1 inch pieces
  • 1 lb baby bok choy, rinsed and cut in half lengthwise
  • 1 bunch scallions, cut into 2 inch pieces
  • 2 tablespoons vegetable oil
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • Toasted sesame seeds, for garnish

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together the hoisin sauce, reduced-sodium soy sauce, sesame oil, grated ginger, and grated garlic until well combined. Set aside to allow flavors to meld.
  2. Toss the Main Ingredients: In a large bowl, combine the chicken thigh pieces, baby bok choy halves, and scallion pieces. Drizzle the vegetable oil over them, season generously with kosher salt and freshly ground black pepper, and toss thoroughly to coat everything evenly.
  3. Preheat the Grill and Prepare Skewers: Preheat your grill to medium-high heat and let it heat for about 3 minutes. Meanwhile, soak wooden skewers in a shallow pan of water for 10 minutes to prevent them from burning during grilling. After soaking, thread the chicken pieces, bok choy halves, and groups of three scallions alternately onto each skewer.
  4. Grill the Kebabs: Place the skewers on the preheated grill. Cook for about 4 minutes, flipping occasionally to ensure even grilling. After the first 4 minutes, start brushing the skewers with the prepared hoisin marinade each time you flip the skewers. Continue cooking for an additional 4 to 5 minutes or until the chicken reaches an internal temperature of 165ºF, ensuring it is fully cooked.
  5. Serve: Transfer the cooked kebabs to a serving platter. Sprinkle toasted sesame seeds over the top for added flavor and texture. Serve immediately while hot and enjoy your grilled chicken kebabs.

Notes

  • Soaking wooden skewers prevents them from burning on the grill, ensuring safety and ease of cooking.
  • Using an instant-read thermometer guarantees the chicken is cooked to a safe temperature of 165ºF.
  • Feel free to substitute the baby bok choy with other sturdy vegetables like bell peppers or mushrooms if preferred.
  • If you don’t have a grill, you can broil the kebabs in an oven, turning and basting with marinade similarly.
