  • 1 small red onion (thinly sliced)

Herbs & Dressing

  • 4 tablespoons fresh mint (roughly chopped)
  • 2 tablespoons freshly squeezed lemon juice
  • Salt (to taste)
  • Freshly ground black pepper (to taste)

Garnish

  • 1/3 cup toasted pine nuts

Instructions

  1. Heat pan: Preheat a grill pan over medium-high heat to ensure it is hot enough for grilling the halloumi.
  2. Grill halloumi: Brush the halloumi slices with 1 tablespoon of olive oil on both sides. Place them on the heated grill pan and grill for 2 to 3 minutes per side, until grill marks appear and the cheese softens slightly.
  3. Combine ingredients: In a large bowl, mix together the sliced cucumbers, halved cherry tomatoes, mixed greens, thinly sliced red onion, and roughly chopped fresh mint. In a small bowl, whisk the remaining 1 tablespoon olive oil with the lemon juice, salt, and freshly ground black pepper to create the dressing.
  4. Assemble salad: Drizzle the prepared dressing over the salad mixture and toss gently to combine. Arrange the grilled halloumi slices on top and sprinkle with toasted pine nuts. Serve immediately for best flavor and texture.
