To Serve

  • 2 tsp cilantro, chopped

Instructions

  1. Preheat Grill: Preheat your grill or grill pan to medium heat to ensure even cooking for the skewers.
  2. Prepare Marinade: In a large bowl, whisk together barbecue sauce, soy sauce, rice wine vinegar, sesame oil, minced garlic, minced ginger, honey until fully combined. Season the mixture with kosher salt and crushed red pepper flakes to your taste.
  3. Assemble Skewers: Thread the chicken pieces, cubed pineapple, diced green bell peppers, and diced red onion alternately onto skewers. Arrange the skewers on a baking sheet and pour half of the marinade over them, allowing the flavors to soak in.
  4. Grill Skewers: Place the skewers on the preheated grill. Brush the tops with some of the reserved marinade. Grill for about five minutes, then flip the skewers and brush the other side with more marinade.
  5. Finish Cooking: Continue grilling for an additional five minutes or until the chicken is cooked through and has a nice char. Ensure the internal temperature of the chicken reaches 165°F (74°C) for food safety.
