Dry Ingredients
- 1 cup plain flour / all-purpose flour (plus extra for rolling out)
- 1/4 tsp cooking salt (kosher salt)
- 1 tbsp white sesame seeds
Wet Ingredients
- 1/3 cup water (just regular tap water)
- 2 tbsp extra virgin olive oil
Topping & Finishing
- 1 tbsp white sesame seeds
- 1/2 tsp salt flakes
- Olive oil spray
- Preheat Oven: Preheat your oven to 200°C / 400°F (180°C fan-forced).
- Mix Dry Ingredients: In a bowl, combine the flour, 1 tbsp white sesame seeds, and 1/4 tsp kosher salt. Make a well in the center.
- Add Wet Ingredients: Pour in the water and 2 tbsp extra virgin olive oil into the well. Use the handle of a spatula or wooden spoon to mix the ingredients until the flour is fully incorporated.
- Knead and Divide Dough: Lightly flour your counter. Scrape the dough out onto it and knead a few times to bring it into a ball. Cut the dough in half.
- Roll Out Dough: Roll one piece of dough into an oval shape about 3mm (1/8 inch) thick.
- Apply Toppings and Thin Further: Place a sheet of parchment paper on a cutting board and transfer the rolled dough onto it. Sprinkle half of the remaining white sesame seeds and half the salt flakes evenly over the dough. Roll out the dough on the paper even thinner to about 2mm (1/12 inch) thickness for crispier crackers.
- Cut into Pieces: Using a pizza cutter or knife, cut the dough into 5cm (2 inch) squares. Leave smaller pieces at the edges and corners as is, and do not move the pieces around because the dough is very thin.
- Prepare for Baking: Slide the parchment paper with the cut dough onto a baking tray. Repeat rolling, topping, and cutting with the other half of the dough on another parchment paper and tray.
- Spray and Bake: Lightly spray the crackers with olive oil spray. Bake both trays together in the preheated oven for 12 minutes.
- Rearrange and Continue Baking: Remove the trays from the oven, carefully shift the pieces that are more golden from the edges to the center to ensure even cooking, then bake for an additional 8 to 10 minutes or until all crackers turn light golden. White crackers are not yet crispy.
- Cool and Serve: Remove from oven and allow the crackers to cool on the trays for about 20 minutes. Serve with dips or a cheese platter and enjoy your homemade artisan crackers!
