Honey-Lime Butter

  • 2 tbsp honey
  • 1 tbsp chopped fresh oregano

  • 2 tsp fresh lime juice
  • 1/2 tsp kosher salt
  • 1/4 tsp fresh ground black pepper

Instructions

  1. Prepare the Grill: Prepare a gas or charcoal grill for medium-high heat, or alternatively heat a grill pan over medium-high heat. Clean and oil the grill grates or pan surface and preheat for 5 minutes to ensure proper searing.
  2. Grill the Corn: Place the shucked ears of corn directly on the grill grates. Rotate the corn frequently to develop an even char on all sides. Continue grilling for 18 to 20 minutes until the corn is tender and has noticeable grill marks with slight charring.
  3. Make Honey-Lime Butter: While the corn is grilling, combine the softened unsalted butter, seeded and finely chopped jalapeño, minced garlic, chopped fresh cilantro, honey, chopped fresh oregano, finely grated lime zest, fresh lime juice, kosher salt, and freshly ground black pepper in a small bowl. Whisk thoroughly to blend all the flavors evenly into the butter.
  4. Butter the Corn: Transfer the hot grilled corn to a 13″-by-9″ baking dish. Generously spread about 1 tablespoon of the prepared honey-lime butter onto each ear of corn to allow it to melt and infuse flavor.
  5. Rest and Serve: Cover the baking dish with foil and let the buttered corn sit for 5 minutes to absorb all the buttery, zesty flavors. Serve warm, accompanied by the remaining honey-lime butter on the side for extra richness.
