  • 1/4 cup Wholesome Yum Coconut Flour
  • 2 tbsp Besti Monk Fruit Allulose Blend
  • 1 tsp Baking powder
  • 1/4 tsp Sea salt (optional, but recommended)

Wet Ingredients

  • 5 large Eggs
  • 1/3 cup Unsweetened almond milk (or any milk of choice; may need more)
  • 1/4 cup Avocado oil (or any neutral tasting oil that is liquid at room temperature)
  • 1 1/2 tsp Vanilla extract (optional, but recommended)

Instructions

  1. Mix Ingredients: In a large bowl, whisk all the dry and wet ingredients together until smooth. The batter should have the consistency of typical pancake batter. If it appears too thick, add a little more milk cautiously to avoid making the batter too wet.
  2. Preheat Skillet: Lightly oil a large non-stick skillet and preheat it over medium-low to medium heat on the stovetop. Proper heating ensures even cooking and prevents sticking.
  3. Cook Pancakes: Drop the batter onto the hot skillet and form into circles of desired size. Cover the skillet with a lid to trap steam and cook for about 1.5 to 2 minutes, or until bubbles start to form on the edges of the pancakes.
  4. Flip and Finish: Carefully flip the pancakes using a thin spatula and cook uncovered for another 1.5 to 2 minutes until they are browned on the other side.
  5. Repeat: Continue cooking with the remaining batter, lightly oiling the skillet as needed between batches.
