Wet Ingredients

  • 1 cup (16 Tbsp; 226g) unsalted butter, softened to room temperature
  • 1 cup (200g) packed light or dark brown sugar
  • 1/4 cup (50g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 1 Tablespoon (15ml) unsulphured or dark molasses (optional, do not use blackstrap)

Mix-ins

  • 1/2 cup white chocolate chips (90g)
  • 1/2 cup dried cranberries (60g)
  • 1/2 cup sweetened shredded coconut (40g)
  • 1/2 cup chopped pecans (64g)

Instructions

  1. Mix dry ingredients: In a large bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, salt, and old-fashioned rolled oats until well combined. Set this mixture aside.
  2. Cream butter and sugars: Using a hand mixer or a stand mixer fitted with the paddle attachment, cream the softened unsalted butter with the brown sugar and granulated sugar on medium speed until smooth, about 2 minutes.
  3. Add eggs and flavorings: Add the eggs one at a time and beat on high until fully incorporated, approximately 1 minute. Scrape down the sides and bottom of the bowl as needed. Add the vanilla extract and molasses (if using), and mix on high until combined.
  4. Combine wet and dry ingredients: Gradually add the dry ingredient mixture to the wet ingredients and mix on low speed until just combined. Then, with the mixer running on low, fold in the white chocolate chips, dried cranberries, shredded coconut, and chopped pecans. The cookie dough will be thick and sticky.
  5. Chill the dough: Cover the dough and refrigerate it for at least 1 hour, up to 2-3 days. Before baking, if chilling for longer than a few hours, let the dough sit at room temperature for about 30 minutes to soften, which helps cookies spread well during baking.
  6. Preheat oven and prepare baking sheets: Preheat your oven to 350°F (177°C). Line two large baking sheets with parchment paper or silicone mats to prevent sticking and promote even baking.
  7. Shape and bake cookies: Using a medium cookie scoop or spoon, roll about 1.5 tablespoons of dough per cookie into balls and place them on the prepared baking sheets, spaced about 2 inches apart.
