Crust

  • 2 cups crushed mini pretzels

  • 2 cups (400 g) granulated sugar
  • 2/3 cup (80 g) all-purpose flour
  • 1 tablespoon finely grated lime zest
  • 1/2 cup fresh lime juice (from 7 to 8 limes)
  • 3 tablespoons tequila blanco

Instructions

  1. Preheat and Prepare Baking Dish: Arrange a rack in the center of your oven and preheat it to 350°F (175°C). Line a 9×9-inch baking dish with parchment paper for easy removal of the bars later.
  2. Make the Crust: In a large bowl, combine the crushed mini pretzels, melted butter, and 3 tablespoons of granulated sugar. Mix well until the crumbs are evenly coated with butter. Press this mixture firmly into the bottom of the prepared baking dish to form an even crust layer.
  3. Bake the Crust: Place the baking dish in the oven and bake the crust for about 10 minutes, or until fragrant and slightly darkened. Once done, remove from the oven and transfer to a wire rack to cool while you prepare the filling. Keep the oven on.
  4. Prepare the Filling: Using an electric mixer on medium speed, beat the 4 eggs and 2 cups granulated sugar together in a large bowl until smooth and well combined. Add the flour, finely grated lime zest, fresh lime juice, and tequila blanco. Beat again until everything is fully incorporated into a smooth batter.
  5. Assemble and Bake: Pour the lime-tequila filling evenly over the cooled pretzel crust. Return the baking dish to the oven and bake for 33 to 35 minutes or until the filling is set and no longer jiggly in the center.
  6. Cool and Serve: Allow the bars to cool completely to room temperature. Once cooled, slice into squares. Dust generously with confectioners’ sugar and optionally top with candied limes for an extra decorative touch and burst of lime flavor.
