Instructions

  1. Sauté aromatics: In a medium saucepan, heat olive oil over medium heat. Add diced onion and cook until softened, about 5 to 7 minutes. Then add minced garlic and sauté for 30 seconds until fragrant.
  2. Sauté mushrooms: Add sliced mushrooms and fresh thyme leaves to the pan. Season with salt and black pepper. Cook, stirring occasionally, until mushrooms are browned and tender, about 7 minutes.
  3. Simmer sauce: Sprinkle flour over the mushroom mixture and stir continuously for 1 minute to cook off the raw flour flavor. Pour in Marsala wine, stirring to deglaze the pan, and simmer until reduced by half, about 5 minutes. Add broth and Dijon mustard, bring to a gentle boil, then reduce heat and simmer for 3 minutes.
  4. Thicken sauce: Stir in heavy cream and cook for an additional 2 minutes until the sauce thickens. Taste and adjust seasoning with salt and pepper as needed. Remove from heat and garnish with chopped fresh parsley if desired before serving.
