Ingredients

Scale

Chickpeas

  • 2 (14.5-oz.) cans chickpeas, drained, rinsed
  • 2 Tbsp. extra-virgin olive oil
  • 1 Tbsp. finely grated lemon zest
  • 1/2 tsp. dried oregano
  • 1 1/2 tsp. kosher salt, divided
  • 1 garlic clove, minced

Dressing

  • 3/4 cup plain full-fat Greek yogurt
  • 3 Tbsp. fresh lemon juice
  • 4 tsp. finely chopped fresh dill, plus sprigs for topping
  • 3 Tbsp. (or more) cool water
  • Remaining 1/2 tsp. kosher salt

Bowl Assembly

  • 3 cups cooked quinoa
  • 2 Persian cucumbers, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta
  • 1/2 cup Kalamata olives, pitted, halved lengthwise

Instructions

  1. Preheat Air Fryer: Preheat your air fryer to 400°F (204°C) for 5 minutes to ensure even cooking and optimal crispiness for the chickpeas.
  2. Prepare Chickpeas: In a large bowl, toss the drained and rinsed chickpeas with extra-virgin olive oil ensuring they are evenly coated. Spread them out in a single layer in the air fryer basket.
  3. Air Fry Chickpeas – First Stage: Fry the chickpeas at 400°F for 6 minutes to start crisping them up.
  4. Air Fry Chickpeas – Second Stage: Shake the air fryer basket to redistribute the chickpeas evenly, then continue frying for an additional 4 to 6 minutes until the chickpeas are crisp on the outside but remain soft in the center.
  5. Season Chickpeas: Immediately transfer the hot chickpeas back to the bowl. Add finely grated lemon zest, dried oregano, and 1 teaspoon kosher salt. Toss thoroughly to coat evenly.
  6. Make Dressing: In a separate bowl, whisk together the minced garlic, plain full-fat Greek yogurt, fresh lemon juice, finely chopped fresh dill, and the remaining 1/2 teaspoon kosher salt. Gradually whisk in cool water, 1 tablespoon at a time, until the dressing reaches a pourable consistency.
  7. Assemble Bowls: Divide cooked quinoa evenly among serving bowls. Top each with the lemon-oregano chickpeas, thinly sliced Persian cucumbers, halved cherry tomatoes, crumbled feta, and halved Kalamata olives.
  8. Finish and Serve: Drizzle the prepared yogurt dressing over each bowl and garnish with fresh dill sprigs. Serve immediately for best texture and flavor.

Notes

  • Use full-fat Greek yogurt for a creamy and rich dressing; low-fat options may alter texture.
  • Adjust crispiness of chickpeas by frying longer or shorter depending on preference.
  • Fresh dill adds authentic Mediterranean flavor; dry dill can be substituted but fresh is preferred.
  • Quinoa can be prepared ahead of time to reduce prep time.
  • For a vegan option, omit feta and substitute yogurt with a plant-based alternative.
